Easy Gluten Free Oat Banana Bread

2 1/4 cups (gluten free) rolled oats
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3 very ripe bananas
2 eggs (or sub 1 flax egg and use 1 regular egg)
1/3 cup coconut or almond milk of choice
1/3 cup coconut oil
1/3 cup coconut palm sugar, brown sugar or maple syrup (whatever you have on hand)
1 tsp vanilla
Dash of cinnamon
Optional add-ins: 1/4 cup chocolate chips and/or 1/4 cup chopped nuts
Preheat the oven to 350 degrees. Blend the oats for about 30 seconds and add the remaining dry ingredients (baking powder, baking soda and salt).
Transfer to a large bowl
Using the same blender, add the bananas, eggs, coconut/almond milk, melted coconut oil, and coconut sugar.
Blend for 10-20 seconds to combine.
Transfer the wet ingredients to a bowl and stir the dry ingredients in. The batter will be thin.
Transfer the batter to a loaf pan and bake for 45-50 minutes or until the bread is nicely browned and a toothpick inserted into the center comes out clean.
Store in an airtight container for up to 3 days or freeze for later!
